Recipe for Chunky Chicken Salad Lettuce Wraps
Ingredients for Chicken Salad Wraps:
12 oz. rotisserie chicken breast, cut into cubes
4-6 large Romaine lettuce leaves
3 large stalks celery, chopped
3/4 cup pecans, roughly chopped
15 red grapes, washed and cut in half
3 tbsp. fresh parsley, washed, stems removed and finely chopped
2 green onions, finely sliced, green part only
Sea salt and black pepper
Tip: Boston Bibb lettuce is another excellent lettuce variety for this recipe because of its attractive, naturally bowl-shaped leaves.
Note: This recipe calls for precooked rotisserie chicken to make it a quick meal. However, please feel free to use your favorite grilled chicken recipe if you prefer.
Ingredients for Chicken Salad Dressing:
1 tbsp. avocado mayonnaise
2 tbsp. Greek yogurt
2 tsp. Dijon mustard
1 tbsp. red wine vinegar
½ tsp. garlic powder
2 tsp. dried oregano
Sea salt and black pepper
Garnish (optional):
Fresh parsley, chopped
Green onions, sliced
Directions:
1. In a small glass bowl, combine avocado mayonnaise, Greek yogurt, Dijon mustard, red wine vinegar, garlic powder, and oregano. Stir to combine thoroughly.
Season with salt and pepper, to taste. Set aside.
2. In a larger glass bowl, combine chicken breast, celery, pecans, grapes, parsley, and green onion. Add dressing and gently stir to combine all ingredients thoroughly.
Season with additional salt and pepper, if desired.
3. Cover and place in refrigerator for at least 30 minutes to overnight to allow the flavors to meld.
4. When ready to serve, divide the chicken salad among the Romaine (or Boston Bibb) lettuce leaves. Garnish with parsley and/or green onions, if desired.
